Rick Bayless is the chef extraordinaire behind Xoco (pronounced sho-ko). He currently has 10 restaurants with gobs of awards, and President Barack Obama wanted him to be the White House chef. Clearly, the man knows what he’s doing. Forget about fighting the crowds to get into this authentic Mexican cafe. Get up early and go for breakfast. Even if you aren’t a foodie, do yourself this one favor; have churros for breakfast. Churros are long, thin Spanish doughnuts sprinkled with cinnamon and sugar. If that isn’t enough to start your day, have them with “bean-to-cup” steaming hot chocolate. This melted Mexican staple, mixed with water or milk (and chili if you dare), is meant to take the place of your morning coffee. And, no one says you can’t dip your churros into it.
